Instructions
Step 1
Bring a large saucepan to boil. Add brown rice and cook for 5 minutes before adding quinoa. Boil together for another 15-20 minutes or until both are tender. Drain.
Step 2
Combine ginger, vinegar, miso, 30 mls of olive oil, salt and pepper. Whisk until smooth.
Step 3
Heat remaining oil over medium-high heat and add tofu and asparagus. Cook for 5-8 minutes or until tofu and asparagus are lightly charred and crisp. Allow to cool for 5 minutes before slicing tofu.
Step 4
Toss spinach with 2 tbs of dressing and transfer to 4 bowls or containers. Spoon the grains on top and add tofu, asparagus, snow peas and spring onions. Drizzle with remaining dressing.
Step 5
Store in the fridge.
