Instructions
Step 1
Peel carrots and boil for 45 minutes or until tender. Drain and puree in a food processor/immersion blender. This step can be prepared up to a week in advance and stored in the refrigerator.
Step 2
Melt butter and add to carrot puree.
Step 3
Beat eggs then add vanilla extract.
Step 4
Combine melted butter/carrot puree with egg/vanilla mix then add remaining dry ingredients. Mix until fully combined.
Step 5
Pour into lightly greased 9 x 13 baking dish or equivalent.
Step 6
Bake at 350 degrees for 45 minutes or until set.
