Instructions
Step 1
Heat blueberries in pot on medium to simmering.
Step 2
Add all ingredients except Xanthan gum.
Step 3
When it starts bubbling again, slowly add Xanthan gum in a few additions, stirring between. Cook for 10-15 minutes to desired thickness.
Step 4
Add to top of cheesecake AFTER it has cooked and cooled for an hour. Top with plastic wrap so it doesn’t dry out. Set in fridge overnight.
