Instructions
Step 1
Prepare the ingredients as described. Cook off the vegetables, either by roasting in the oven at 200°C (Gas 6) for 25 minutes, or frying off in a pan until cooked through.
Step 2
Prepare each quesadilla by covering half a side with red pesto, followed by a sprinkling of mozzarella, a portion of vegetables, and a second layer of cheese.
Step 3
Fold over the tortilla wrap of each quesadilla and place into an oiled pan. Flip after 5 minutes and once both sides are golden, slice in half and serve.
