Instructions

Step 1
Slice onion and sweet pepper
Step 2
Cook 2 cups of quinoa according to package instructions. Season chicken with all seasonings. Add to pan on medium heat. Cook covered, turning once until internal temp of 165. Remove chicken and add onion and pepper. Add seasoning and sauté until soft and onion is translucent. Add rinsed and drained black beans. Add diced tomatoes (with liquid). Sauté until covered in seasoning.
Step 3
Plate 1/2 cup of quinoa with 1/3 cup of bean/tomato mixture and 4 oz of chicken. Add lettuce and queso to preference.
