Illich / Middle eastern Endive salad
1 1/2 teaspoon salt
1/3 cup fresh lemon juice 1 cup sliced green onion 1/2 cup plain yogurt
4 cups chopped endive greens
1/2 cup olive oil plus a tbs for garnish
1 tsp sumac
In a large bowl combine endive leaves, onion, salt, lemon juice, and olive oil. Mix until the greens have wilted. Add yogurt and mix well. Place into a serving bowl. Top with a tablespoon of olive oil and sumac. Serve with pita bread and enjoy.
