Potatoes Boulangère is a traditional French dish given a delicious twist with the addition of Parmesan cheese. This dish layers thinly sliced potatoes and onions with herbs and chicken stock, topped with a golden, melted Parmesan crust. Served as a side or main, it's perfect for any gathering.

Step 1
Preheat your oven to 180°C.
Step 2
Peel and thinly slice the potatoes.
Step 3
Peel and thinly slice the onions and garlic.
Step 4
Heat the oil or butter in a frying pan over medium heat. Add the onions and garlic and cook until they are softened and lightly golden.
Step 5
While the onions are cooking, strip the leaves from the thyme and rosemary sprigs and chop them finely.
Step 6
In a large baking dish, arrange a layer of potatoes, then a layer of the cooked onions and garlic, sprinkle with some of the chopped herbs, salt, pepper and about 1/3 of the Parmesan cheese. Continue these layers until all the ingredients are used up, finishing with a layer of potatoes on top.
Step 7
Pour over the stock until it comes about two-thirds of the way up the potatoes – you don't want to completely cover the top layer of potatoes.
Step 8
Cover the dish with foil and bake in the oven for about 1 hour.
Step 9
After 1 hour, remove the foil, sprinkle the remaining Parmesan cheese over the top of the potatoes, and continue baking for another 30 minutes, or until the potatoes are golden brown and crispy on top and the stock has been absorbed.
Step 10
Let it cool for a few minutes, then serve. Enjoy your delicious, cheesy Potatoes Boulangère!
