Baked Falafel

A recipe I found somewhere online and wrote down long ago. Make Tahini Sauce to with this as well.

Instructions

Step 1
If chickpeas are dry, soak in a bowl of water for 24-48 hours. If canned, drain, rinse and begin.
Step 2
Add wet chickpeas to a food processor with parsley, cilantro, onion, garlic, cumin, salt, baking powder and lemon juice. Process until minced but not puréed.
Step 3
Preheat oven to 375° F and grease a baking sheet with half of the olive oil.

Step 4
Squeeze falafel mixture into 1.5 inch balls and flatten slightly. Arrange on a baking sheet and brush tops with remaining olive oil.
Step 5
Bake 15 minutes, flip and bake for 10 minutes or until golden brown.
Step 6
Serve in Pita bread or lettuce leaf with chopped lettuce and tomato. Top with Tahini Sauce.
