German Potato Salad with Crispy Bacon

Instructions

Step 1
Peel the potatoes and cut them into smaller pieces. Boil the potatoes in salted water until soft, approx. 30 minutes, then strain.
Step 2
Boil the eggs for about 6 minutes. If you prefer a firmer yolk, boil for 10-11 minutes.
Step 3
Marinate the onion. To do this, peel and slice half a red onion (the rest goes into the salad). Add 10 ml of vinegar, 100 ml of water, 0.5 teaspoons of sugar, and a pinch of salt to the pot. Heat until boiling and pour over the onion slices. Leave to marinate for 10 minutes.
Step 4
For the sauce, mix together the mayonnaise, sour cream, chopped garlic, and 10 ml of apple cider vinegar. Season to taste with salt and a little sugar.
Step 5
For the crispy bacon, place the bacon slices in a cold pan and heat the stove to medium heat. Do not add oil, as the bacon is fat enough on its own. Cook the bacon, turning occasionally, until it's nicely crisp. Then transfer to baking paper to cool to remove excess fat.
Step 6
Clean the pan, add previously boiled and chopped potatoes to the same pan and fry until golden. Add thyme and season with salt and pepper if necessary.
Step 7
Assemble the salad. Arrange potatoes, crispy bacon, halved cherry tomatoes, pickled onion slices, regular onion slices, sliced gherkins, and boiled eggs on a plate. Drizzle over the sauce and drizzle with olive oil.
