Instructions
Step 1
Heat oil in a pot then add grated ginger and garlic and finely diced onions.
Step 2
Sauté until golden brown then turn heat to low.
Step 3
Add water to the pot and leave to simmer for 10-15mins.
Step 4
Wash and clean spinach– don’t remove stalks. Add to soup mixture. ( You can also add diced pumpkin, sweet potatoes, carrots and other vegetables at this stage).
Step 5
Simmer spinach until wilted.
Step 6
Mix one tablespoon of cornflour to 30mls of water In a cup Stir through and add to the soup until thickens, add salt and pepper and squeeze of lime to taste.
Step 7
Stir gently until ready to serve. Put into a soup bowl and garnish with finely chopped spring onion.
