Step 1
In a large saucepan over low heat, cook the onion and garlic in half the olive oil until softened but not coloured. Increase the heat to medium-high and cook for 1–2 minutes, until the onion is golden.
Step 2
Add the broccoli and kale to the saucepan with the rest of the olive oil, season with salt and pepper, and cook for a couple of minutes.
Step 3
Pour in the water, bring to a boil, and simmer until the vegetables are tender. Add the coconut milk and blend everything together to make a smooth, creamy soup. Serve the soup hot, topped with chopped spring onions and edible flowers.
