My family's favorite Shrimp and Grits. This is creamy, flavorful, and oh so good!

Ingredients

Grits
1 cbutter
¼ cbacon drippings
16 cwater
or chicken stock
4 cstone ground grits
uncooked
½ cmilk
¼ cgrated parmesan cheese
¼ cshredded monterey jack cheese
canned chipotle chiles
Chopped, to taste
2 Tbssalt
Tasso Gravy
6 oztasso
finely chopped, Andouille and/or Prosciutto will work as well
2 Tbsbutter
melted
½ cyellow onion
chopped
¼ cminced garlic
½ call purpose flour
2juice of lemons
¾ cclam juice
1 cheavy cream
4tarragon sprigs
chopped
salt
to taste
white pepper
to taste

Instructions
Grits
Step 1
Combine the butter, bacon drippings, and water in a large stockpot and bring to a boil.
Step 2
Add the grits and mix well, removing any impurities that float to the surface. Simmer over medium-low until the grits are tender, stirring occasionally. While grits are cooking, skip to step four and start on Tasso Gravy.
Step 3
Stir in the milk, parmesan cheese, monterey jack cheese, chipotle chiles, and salt. Keep warm.
Tasso Gravy
Step 4
Start gravy while grits are cooking. Saute the tasso in the butter in a heavy stockpot for 2 minutes.
Step 5
Add the onion and garlic and saute for 3 minutes or until the onion is translucent.
Step 6
Add the flour and cook until bubbly, whisking constantly.
Step 7
Add the lemon juice, clam juice, and cream. Reduce the heat and simmer until thickened, whisking constantly and adding additional cream if needed for the desired consistency. Season with tarragon, salt, and pepper.
Shrimp
Step 8
Season the shrimp with salt and white pepper.
Step 9
Saute in a small amount of olive oil in a skillet.
Step 10
Add to the tasso gravy and mix gently.
Step 11
To serve, spoon grits into serving bowls. Top with the shrimp and tasso gravy. Garnish with parsley and tarragon. Serve immediately.
