Step 1
Combine 140 g Flour, 140 g water, honey, and yeast. cover and set out at room temp for 1 hour, then refrigerate for 12 to 24 hours. Take out of refrigerator and mix with remaining flour and yeast and salt. Beat in stand mixer with dough hook low for 1 min then high for 4 min. knead dough with additional flour if needed to reach a soft non sticky consistency. Let rest 5 minutes. Coat the inside of bowl and hands with olive oil. Pat dough smooth with olive oil coated hands to make smooth dough ball. place in bowl and allow to raise for 1 to 2 hours at room temp. Pour dough out of bowl into flour. start to press into flat pizza crust. Transfer to parchment paper and continue to shape into thin crust of appropriate size. Smooth sauce over dough and pre-bake at 500 degrees for 3 minutes. remove from oven and add remaining toppings. Continue baking until desired doneness.
