or adjust to desired spiciness

1 teaspoongarlic powder

4 tablespoonsbutter

1 ¾ cupcorn frozen
or canned

1 ⅔ cupchicken
cooked, shredded

2cloves garlic

0.5onion
yellow or red

0.5red bell pepper

mexican cheese
or colby-jack cheese

½ cupsour cream

Instructions
Step 1
Combine the Rice, chicken stock, paprika, chipotle powder, garlic powder, cumin, salt, and one tablespoon of the butter.
Step 2
Bring to a simmer and reduce heat to low.
Step 3
Cover and cook for twenty minutes.
Step 4
Add the remaining butter, beans, corn, chicken, garlic, onion, and red bell pepper and turn the heat to medium high.
Step 5
Stir constantly until the onions are tender enough for your taste.
Step 6
You can stir in the cheese and sour cream or just use it as a garnish.
Step 7
Top with cilantro if desired.
