These are popular sweets in Japan but they are so easy to make and look super cute . I’ve done a twist by adding strawberries and using a strawberry coconut sauce instead of the traditional sweet soy glaze

Step 1
To a large bowl add silken tofu 2 tbsp sugar ( if you like it really sweet add a little more sugar or if you are watching sugar add sweetener of choice ) and 120 grams glutinous rice flour . Mash the ingredients together with a silicone spatula then knead until it becomes a dough . Now divide the dough into 3 equal parts one will colored pink one will stay white and the other one will be green

Step 2
Next blend 10 strawberries with a tablespoon of sugar then strain using a sieve to remove the seeds .Add one tablespoon of the strawberry syrup to 1/3 of the dough to color it pink then add roughly 2 tablespoons of glutinous rice flour to make it into a dough . Add 1/2 tsp matcha powder to 1/3 of the dough and knead until it’s combined and the dough is green . Roll the dough into balls . It makes about 6 of each color depending on how large you roll them . Now set aside a large bowl with ice water in it . Bring a pot of water to a boil and add the white dango balls first . When they start to float simmer two more minutes then strain and put in the ice water . Next boil the pink and then do the green .

Put green white and pink balls on skewers to make the traditional color display then add 1 tbsp of creamy coconut milk to the rest of the strawberry syrup and glaze over the top of the dango and enjoy
