One Pot Mexican Style Baked Rice 😍 This is also the final dish in my mini one pot series and I think it’s my favourite of the lot! There’s so much going on in a singular pot and every mouthful will definitely make you smile 🙂 I’ve popped some tips at the bottom if for example you can’t eat beans (I never used to be able to and still can’t have many!) or if for instance you want to make this veggie. It’s the perfect dish for everyone, so easy to make, and minimal washing up too 🥳

Step 1
Method:
1) Heat oil in a large oven proof pot and fry the peppers for a few minutes.
2) Add in the chicken thighs and cook until they are coloured and sealed.
3) Sprinkle in the spices and herbs and coat the chicken and peppers.
4) Add in the rice and allow that to be fully coated in the spices too.
5) Pour in the chopped tomatoes, stock and black beans. Mix then pop the lid on.
6) Put into a preheated oven (200C fan / 220C) for about 35-40 minutes.
7) Remove from the oven, sprinkle the cheese on top and return to the oven for a further 10 minutes until melted.
8) Serve up and enjoy!
TIPS:
🔹 I don’t eat beans? Simply remove them or switch for more meat / veg.
🔹 Can this be veggie? Yes, remove the chicken and add another bean or sweet potato.
