Instructions
Step 1
1. peel the onions and parsnips/potatoes and cut into small pieces. Rinse the lentils with cold water until the water runs clear.
Step 2
2. Heat the olive oil in a saucepan, then, add the onions, fry for 4 minutes, then add the other vegetables, lentils, water and vegetable stock.
Step 3
3. Gently simmer the soup for 20 minutes or until the vegetables are soft. Add the chopped parsley and blend the soup using a blender.
Step 4
4. Add the coconut milk and season with salt and pepper to taste.
