Instructions
Step 1
1. Pre-heat oven to 200°C (390°F).
Step 2
2. In a medium bowl, whisk the egg until light and fluffy. Add in the milk, yogurt and vanilla and whisk again until fully combined.

3. Whisk in the flour, stevia and baking powder until smooth and lump free.
Step 4
4. Divide the batter evenly between 6 prepared fairy cake cases, add 3-5 blueberries per muffin then top with a sprinkle of oats.
Step 5
5. Bake for 10-15 minutes or until a toothpick inserted into the centre comes out clean.
Step 6
6. Allow the muffins 5-10 minutes to cool before enjoying!
