Blanch pork feet chunks in boiling water (with a couple of scallions, Szechuan peppercorn, a slice of ginger and 2 table spoons of cooking wine in it) for a few minutes, remove blanched pork feet from heat, set aside;

Heat up 2 table spoons of cooking oil in a pot, add in smashed rock candy to melt on low heat, further add in blanched pork feet, stir fry for a couple for some minutes until you get a nice brown coloring, set aside;

Heat up 2 table spoons of cooking oil in a big pot, add in sliced garlic and smashed ginger as well as tomato wedges to stir fry on medium heat until tomato becomes soft. Further add in pre-cooked pork feet to mix, pour in light soy sauce, 2tbs cooking wine, dark vinegar, bay leaves, star anise, Fructus Tsaoko, dried chili to stir fry. Mix well and simmer for a couple of minutes before adding in water (just enough to cover the meat, approximately 1000ml). Bring broth to boil and simmer it for up to 1.5 hours on medium low heat until pork feet meat becomes soft.
