Instructions
For the marinade,
Step 1
Mix 1 tsp black pepper, paprika, cayenne, turmeric and a sprinkling of salt in a small bowl.
Step 2
Grate one clove of garlic.
Step 3
Zest and juice half a lemon.
Step 4
Add a finely chopped small bunch of parsley.
Step 5
Grate a small piece of onion.
Step 6
Add a heaped teaspoon of tomato purée.
Step 7
Mix and add a generous drizzle of rapeseed (or olive) oil.
Prepare the chicken
Step 8
Cut one chicken breast in half
Step 9
Rub the marinade over the chicken.
Step 10
Leave the chicken marinading in the fridge over night if possible.
Cooking the chicken
Step 11
Heat up a griddle pan on full wack.
Step 12
Place the chicken in the griddle pan, with the other half of the lemon facing downwards.
Step 13
After about a minute and a half turn the chicken over.
Step 14
This can be paired up with some spouting broccoli and boiled sweet potato which can be mashed.
Step 15
Drizzle over some more rapeseed (or olive) oil and squeeze the now deliciously sweet charred lemon.
