Cheat's Chicken Roast Balls

Cheat's Chicken Roast Balls I LOVE a Sunday roast, but it's a lot of work... How's this for a cheat? These delicious little Chicken balls are literally made from just chicken mince and a packet of sage and onion stuffing- the perfect substitute for a cut of meat for a quick midweek roast! If I'd had time, I probably would have done some cheeky Yorkshires and roasted carrots!! I would love to know if you're going to give these a try! I've written up the recipe below. A x Makes 25 Chicken balls (4 big dinners) 170g packet of sage and onion stuffing mix. 500g chicken mince Salt and ground black pepper Oil for roasting Make up up the stuffing mix in a large mixing ball to packet instructions. Leave to cool completely. Add the chicken mince to the stuffing and season with salt and pepper. Use your hands to mix the stuffing and chicken together until thoroughly blended. Divide the mixture into 25 equal sized balls (roughly the size of a standard meatball) Get a little oil on your hands and roll each one firmly in your palms, until coated in a thin layer of oil. Place on a non-stick baking tray. Bake on the oven for 30 minutes on 200C until golden brown and cooked through. Turn them over once or twice during cooking, so they don't stick.
