Instructions

Step 1
In a large mixing bowl, add the baby spinach, lentils, chopped tomatoes, red onion, cucumber, goat cheese and fresh mint.
Step 2
To make the dressing, combine all of the ingredients in a small bowl with a whisk to combine.
Step 3
Drizzle the dressing over the salad and serve.
