Thai Yellow Curry with Chickpeas Pumpkin and Spinach

Ingredients
4 servings
1red onion
finely chopped
2cloves garlic
finely chopped
0.5pumpkin
roughly chopped
3 Tbspyellow curry paste
thai
1lime
juice and finely grated rind
2 Tbspfish sauce
2 tspbrown sugar
400gchickpea
drained and rinsed
2 handfulspinach
finely chopped
1 handfulfresh coriander
for garnish, optional
1 Tbspfresh ginger
finely grated
2 x 400mlcan coconut milks
Instructions
Step 1
Heat a splash of oil in a large saucepan and then add the onion, garlic and pumpkin and gently cook until the onion starts to soften. Add the curry paste and ginger and cook, stirring, until the paste becomes fragrant.
Step 2
Add lime juice and rind, coconut milk, fish sauce, sugar and chickpeas. Cook until the pumpkin is almost tender and then add the spinach.
Step 3
Gently simmer until spinach has wilted.
Step 4
Serve in a bowl topped with toasted coconut and coriander leaves.
