Key Lime Tartlets

Instructions

Crust

Step 1
Preheat oven to 350ºF. In medium bow, with fork, mix all crust ingredients together until blended and evenly moistened. Divide into 6 equal portions. Press 1 portion onto bottom and up sides of 1 of 6 (3 1/4 inch) tartlet pans with removable bottoms; repeat with remaining portions. Place tartlet pans on jelly-roll pan. Bake 8 to 10 minutes or until crusts are set. Place tartlet pans on wire rack to cool slightly.

Filling

Step 2
In medium bowl, whisk together all filling ingredients until blended; pour into crusts, dividing evenly. Bake 12 to 15 minutes, until filling is set. LEt cool completely on rack.
Step 3
Remove tartlets from pans; refrigerate until chilled. Garnish with thin strips of peel, if desired.
