Ingredients

2 slicesbacon
sliced lengthwise and cut into rough squares
1onion
small, chopped
4 ouncessausage
15 ouncecan beans
ยฝ cupwater
or broth
8 ouncesbroccoli
tops cut into 1" pieces, stem peeled and cut in 1/2" pieces, separated
2 teaspoonsgarlic
minced
ยผ teaspoonsalt

teaspoonred pepper flakes
Parmeson cheese
grated, optional
Instructions
Step 1
Render bacon over low heat. (Cook, stirring frequently, until beads of oil form on the outside of the bacon, ~10 minutes. ) Add onion, broccoli stems,and sausage, turn heat to high, and cook 3 minutes, stirring frequently. (If using ground sausage, break it up.) Add garlic,, salt,, and red pepper flakes, cook until fragrent. Add broth, bring to boil.
Step 2
Add broccoli tops, return to boil. Cover, reduce heat to low, and boil gently 7 minutes.
Step 3
Add beans, mix well, boil 3 minutes. Season to taste. Top with Parmeson if desired. Serve with rolls or toast, or over baked potatoes, rice, or pasta.
Step 4
VARIATION: Replace bacon with 2 tablespoons cooking oil.
