Ingredients
6 servings
2 teaspoonsolive oil
1white onion
diced
3garlic cloves
crushed
1red pepper
chopped
450 gramslean turkey mince
1 tablespoonchilli powder
2 teaspoonsground cumin
1 teaspoondried oregano
¼ teaspooncayenne pepper
1 ½ teaspoonsalt
2 x 400 gramtins chopped tomatoes
300 millilitreschicken stock
2 x 400 gramtins kidney beans
drained and rinsed
1400 gramtin sweet corn
drained and rinsed
Instructions
Step 1
In a large frying pan, sauté the onion, garlic and red pepper over

a medium heat for around 5 minutes, or until the vegetables are
Step 3
tender and beginning to caramelise. Add the turkey to the pan and

cook through before adding the spices.
Step 5
Let the spices roast in the pan until they are aromatic before adding
Step 6
the chopped tomatoes, stock, kidney beans and sweet corn. Bring
Step 7
the chili to the boil and let it reduce for around 30 minutes by
Step 8
which point the sauce will be thick and rich. Season to your taste
Step 9
with a pinch of salt and black pepper before removing from the
Step 10
heat.

To serve, top with your favourite Mexican condiments such as
Step 12
guacamole, sour cream or hot sauce

This is a great, nicely balanced dish, however, if you want to

lower the carbs substitute the corn and half the beans for some
Step 15
chopped bell peppers
