Instructions
Step 1
Boil pasta. Reserve 1/2 cup of pasta water.
Cheese Sauce Base
Step 2
Add ingredients into a pot. Simmer on low heat. Don’t not simmer for too long, just warm it up all the way through before added to roux.
For the roux
Step 3
On low to medium heat, crumble sausage into pot and render out fat.
Step 4
Remove meat, add in butter, sauté your minced garlic and shallot for 2-4 minutes.
Step 5
Add in flour and continue to stir until it has a light golden color.
For the Cheese Sauce
Step 6
Pour simmered sauce base and pasta water into the roux, stir well together.
Step 7
Add in cheese until melted and homogeneous. Add cooked pasta into the sauce.
Completion
Step 8
Layer your macaroni and cheese into the baking dish, with macaroni in the bottom, cheese, macaroni then cheese on top.
Step 9
Bake at 350°F until top layer of cheese is almost toasted. Sprinkle some panko on top then let it bake until golden.
