Instructions

1. Cook red syrup

First, you put 50gr of sugar, 40gr of water and 10gr of lemon juice into the pot, stir the ingredients.

Heat the sugar water on medium heat until it boils, then reduce to the lowest heat, cook until it turns light brown and thickens, then turn off the heat. After turning off the heat, stir gently so that the sugar does not stick to the bottom of the pot.

Then, you add 1-2 drops of red food coloring (can be omitted or replaced with a color of your choice) into the sugar water mixture and stir well.

Pour the red syrup mixture into a bowl and let it cool.

2. Mix colored jelly

First, soak 15g of gelatin powder with about 20ml of ice cold water for 5-10 minutes to let the gelatin expand (the gelatin soaking water is not in the recipe!).

Meanwhile, you add 20g of sugar, 20g of lemon juice to 80g of water, stir well. Put the soaked gelatin powder into the mixed water, stir gently and microwave for 10-15 seconds to melt the mixture.

Divide the mixture into 2 parts (ratio 6:4). Mix part 4 with black food coloring and pour into a tray. Divide the larger portion into 6 equal portions and mix with your desired coloring.

3. Shaping the iris

First, you need to grease the round mold to prevent sticking. Then, inject the colored jelly into the mold to make the irises.

Using an ice cream cone or bottle cap, cut the black jelly into round balls. Gently place the round black jellies in the center of the mold to shape the pupils.

Finally, you pump more colored jelly around to fix the black jelly.

4. Cook sugar water

First, soak 10 leaves of gelatin with 20ml of cold water for 5-10 minutes.

Meanwhile, put in the pot 200g sugar, 80g water, 100g starch syrup and flavorings of your choice, cook over low heat. After the mixture boils and thickens, turn off the heat and pour it into a bowl.
