Instructions

Step 1
Preheat oven to 350°F.
Step 2
Pour the sugar into a pan over medium heat. Continually stir the sugar until it begins to caramelize. Once caramelized remove from the heat.
Step 3
Pour the hot caramelized syrup into your flan pan and coat the bottom.
Step 4
Set the caramelized pan aside to cool.
Step 5
In a large mixing bowl, add the cream cheese, eggs, condensed milk, evaporated milk and vanilla extract. Mix together until everything is fully combined.
Step 6
Pour the custard mixture into the caramelized pan.
Step 7
Cover the top of the pan with a lid or aluminum foil.
Step 8
Place the flan pan in a large baking dish (creating a water bath) and pour enough water in the dish until it reaches about halfway up the pan.
Step 9
Next place the baking dish in the oven and bake for an hour. After the hour, check if the custard is done by inserting a knife. If the custard is very wet, bake for an additional 15 minutes.
Step 10
Carefully remove the dish from the oven, and then lift the flan pan out of the water bath.
Step 11
Next remove the lid or aluminum foil and let it cool for about 30 minutes. The flan may still be a little soft and will continue to cook with the heat.
Step 12
Be sure to chill the flan thoroughly before unmolding. I recommend placing in the refrigerator for 3 hours or overnight.
Step 13
To serve, remove the lid or aluminum foil and slide a knife along the edges of the pan to loosen it up. Place a plate on top of the flan, and flip it over so that the flan is now upside down. Your flan should be sitting in the caramel on the plate, ready to enjoy! Que Rico!
