Step 1
-Turn on your oven to 325*F and grease your baking dishes liberally with butter. this recipe makes 2 loaf pans or an 8x12. -Sift together the flour, salt, baking soda and cinnamon into a bowl and set aside. -Place the butter and both sugars in the bowl of a stand mixer and beat with a paddle on medium speed until light and fluffy and doubled in volume, about 5 minutes, then add your eggs one at a time, ensuring they are fully incorporated before moving on to the next addition. -Scrape down the bowl and add the mashed banana, sour cream, and vanilla and beat on medium speed for 1 minute. -Scrape the bowl down again and add the dry ingredients, then paddle together on lowest speed until the mixture has JUST come together, then turn off the machine. -At this point it is best to fold the garnishes in by hand as to avoid over-mixing, so remove and clean the paddle of the machine and with a rubber spatula, fold in the garnish, then pour the batter into your baking dish. -Bake at 325 until a toothpick comes out clean when plunged into the middle. For a large pan it will take roughly 45-1 hour. For a smaller pan, 25-30.
