Pesto Stuffed Chicken

Instructions

Preheat the oven to 375°F

Step 1
Line baking sheet with parchment paper (or oiled tin foil.)
Step 2
In sm. bowl, combine salt/pepper; sprinkle & pat this mixture onto both sides of chicken.
Step 3
➡️On lg. plate, place a chicken breast, smooth side down with narrowest end closest to you. Add 1T pesto to center; spread evenly across chicken. Sprinkle 2T cheese over top (keep ½” cheese-free border.). Starting at end closest to you, carefully roll up chicken breast.
Step 4
Using 4 toothpicks to secure. Place breast, toothpick side down, on prepared baking sheet. (Repeat with all chicken.)
Step 5
Slowly pour 1t oil over each breast; use pastry brush to coat top & sides of each. Add ½t Dijon mustard on top of each ; use pastry brush to coat top & sides of each. Carefully sprinkle 1T bread crumbs over top & along sides of each breast, using fingers to pat crumbs onto sides.
Step 6
Bake (20-25 min.) until chicken is firm & no longer pink.
Step 7
Remove; let stand for 5 min. before removing toothpicks. Slice each breast ½” to 1” thick on diagonal before serving.
Step 8
Serve with pasta and/ or vegetables & enjoy!
