Big Dave’s Crockpot Chili (Lower Sodium)

I’ve been working on this recipe for a while. Trying to mix savory and tasty with the least amount of sodium possible. A nice mix of flavor and mild heat (2 out of 10). Won’t tear up your stomach either.
Update 10/28/24:
If you like more liquid in your chili, leave all the liquid from cans of vegetables. If you enjoy your chili more chunky, make sure to drain all the cans and double your tomato paste.

Ingredients

Add these in large frying pan

1red onion
large, diced

3bell peppers
red yellow orange

3 stalkscelery
diced

2 lbground beef

6 oztomato paste
canned
Step 2, stir in spices in slow cooker

2 tablespoonschili powder

1 tablespoonminced garlic

1 tablespoonoregano

1 tablespooncumin

1 teaspooncracked pepper

1 teaspooncayenne pepper

1 tablespoonapple cider vinegar

1 tablespoonworcestershire sauce
Step 3, add cans into slow cooker

1 canscorn

5 ozgreen chilies
chopped, canned

16 oztomato sauce
canned

14 ozfire roasted tomatoes
canned

28 ozdiced tomatoes
canned

1can kidney beans
drained and washed

1can pinto beans
drained and washed

Instructions
Step 1
In a large pan or wok, add diced veggies, cook for 5 mins. Move contents to a bowl.






Step 2
Fry meat with garlic, until browned. Add tomato paste and simmer for 5 mins



Step 3
Add meat in pan and veggies in bowl to a crockpot, set on high

Step 4
Add spices into slow cook, stir







Step 5
Add in canned ingredients







Step 6
Slow cook on high for 3-4 hours or until everything is soft. Add cheese, cream, hot sauce and salt to taste.
