Instructions
Step 1
Bring pot of water to a boil and add a bag of quinoa to cook for 13 minutes
Step 2
Cut sweet potatoes into cubes, add salt pepper, and a drizzle of olive oil then toast
Step 3
Place 1/3 cup of quinoa into a bowl and add sliced avocado, 1/3 cup corn, 1/3 cup black beans, pickled red onions, and sweet potato. Optional add protein such as shrimp or shredded chicken and serve
