Ingredients

400gdry red kidney beans
soaked overnight
1 Tbspolive oil
1white onion
diced
1green capsicum
cored and diced
2stalks celery
medium, diced
6cloves garlic
minced
3 Tbspfresh parsley
chopped
1 tsphot sauce
1 tspdried thyme
1 tsppaprika
½ tspsalt
¼ tsppepper
⅛ tspcayenne
2bay leaves
1 Llow-sodium vegetable stock
200gspinach leaves
Instructions
Step 1
Drain Beans.
Step 2
In a large pot over medium heat, add the olive oil
Step 3
Add onion, bell pepper, and celery to the pot. Cook until tender for 8-10 minutes, stirring occasionally. Add garlic, and cook for 1 minute, until fragrant.
Step 4
Stir in parsley, hot sauce and spices, and seasoning, and stir to coat the vegetables. Cook for 1 minute.
Step 5
Add in the kidney beans, bay leaves, and stock.
Step 6
Bring to a boil; cover, and simmer for 1 hour and 15 minutes.
Step 7
Remove the lid and let simmer for another 15 minutes.
Step 8
stir in the spinach for a few minutes.
