Moroccan Marinade
2cloves garlic
minced
1 cupgreen onions
chopped
½ cupdry white wine
3 TBLhoney
2 tblolive oil
2 tspground cumin
2 tspground coriander
½ tspcinnamon
Chicken
Apricot and Pistachio Cousous
Instructions
Step 1
Make the marinate in a large measuring cup. Place chicken in a large, sealable bag and pour in half the marinade. Seal and toss to coat. Chill for at least 30 min or up to 8 hours. Cover and refrigerate the other half of the marinade (you will use this as a dressing for the couscous ).
Step 2
Prepare a medium-hot fire in your grill.
Step 3
For the couscous, place the apricots in a bowl and pour in the hot water and let soften for about 5 min. Prepare the couscous to package directions. Drain the apricots. Toss the couscous with the reserved marinade, apricots, and pistachios. Set aside.
Step 4
Remove the chicken from the marinade, discarding the marinade. Grill the chicken for 18-20 min, or until the juices run clear or when it reaches 160 F. Serve the chicken on a bed of the apricot and pistachio couscous.
