Thai Curry Noodle Soup
THAI CURRY NOODLE SOUP 🍜 This is a really simple one-pot recipe that can be made in under 15 minutes!! Plus it can be adjusted to use up what veg you have in the fridge to reduce food waste!

➡️Is it spicy? No, I make all my dishes mild for all to enjoy. If you want to add more heat either use hotter curry powder or add more chilli flakes to taste
➡️Can I add extra protein into this? Absolutely, you can add chicken, prawns or tofu if you wish

Instructions
Step 1
1️⃣Firstly, finely slice the onion + crush the garlic and then roughly slice the pepper into thin strips
Step 2
2️⃣Heat a large pot with oil and add onion + pepper + garlic + thai paste + curry powder + ginger paste and fry together for 2-3 minutes
Step 3
3️⃣Now add the coconut milk + stock cube + noodles + water and stir
Step 4
4️⃣Place a lid on the pot and simmer for 5-7 minutes
Step 5
5️⃣Serve in a bowl topped with lime juice + coriander + sesame seeds
