Instructions

Step 1
Roughly chop the courgettes, broccoli, onion and garlic.
Step 2
Gently fry the chopped onion in a saucepan with the oil and garlic until the onion softens.
Step 3
Add stock made up with the water, broccoli, courgettes. Heat till boiling, then turn down the heat and simmer for 10 minutes or until the vegetables are tender, but not at all mushy.
Step 4
Take off the heat and add the grated parmesan and season to taste. Cool a bit then put in the blender until smooth and creamy. Return to the pan to heat. Add a bit more stock if necessary.
