Instructions
Step 1
Boil chicken (any cut ) with onion, garlic n knorr (either kind ) then shred and save broth.
Step 2
Add hominy to broth
Step 3
Boil guajillo chiles until soft. Cut the chilies open and remove most of the seeds n stems
Step 4
Blend chilies with 1/2 onion (white or yellow) 5 garlic cloves, and 2 tablespoons of bouillon
Step 5
Add cumin powder, oregano, pepper and salt like a teaspoon each to blender with a cup of broth
Step 6
Cover and blend till smooth (if it's too hot it'll explode so room temperature broth or cold water)
Step 7
Add chile paste to chicken broth and stir, add shredded chicken back to the pot simmer until hominy is soft
Step 8
Salt to taste (very important, u may think ur adding too much salt but keep tasting as you go until you get that flavor)
Step 9
Shred cabbage, chop cilantro, green onion. Slice lemons, and use ur menudo mix for toppings
