2 lbsFish
preferably Catfish
5 Tbspfish sauce
4 Tbspsugar
½ tspsalt
1 tspfine black pepper
2 tspcaramel sauce
Vietnamese, cooking, OR you can make you own caramel sauce by adding 2 TBSP cooking oil and 2 TBSP sugar to a sauce pan to cook until golden brown Set aside until needed

Instructions
Step 1
Heat pan on medium high heat
Step 2
Add minced Shallots first then the Garlic
Step 3
Sauté both for about a minute or until a light brown then add in the Jalepenos
Step 4
Sauté for about a minute, remove and set aside
Step 5
Using the same pan on medium high heat, add about 1 Tbsp Veg oil
Step 6
Add in Fish of choice (I used fresh catfish)
Step 7
Brown both sides for about 3 minutes each (gently flip fish)
Step 8
Add in the sauce mix, then the shallots, garlic & Jalapeños
Step 9
Let it simmer for about 4-5 minutes
Step 10
Using a spoon, occasionally drizzle the sauce from the pan onto the fish
Step 11
Reduce heat to medium low heat for a few minutes
Step 12
Continue simmering until the sauce thickens
Step 13
Serve with rice
