We love taco night, but it usually devolves into an overabundance of carbohydrates. I designed this simple recipe to get my taco fix without all the carbs.

Instructions
Step 1
1. Cook ground turkey. Add taco seasoning and follow packet directions.
Step 2
2. Cook peppers and onions in 2 tsp extra virgin olive oil.
Step 3
3. One serving is 1 tortilla, 1 cup of pepper and onion mix, 3/4 cup ground turkey, and 1/3 cup of cheese.
