8 oz90% lean ground beef

8 ozchorizo
casings removed

1 tspsmoked paprika

1 tspground cumin

½ tspkosher salt

1 x 14.5 ozcan fire roasted diced tomatoes

1 x 15.5 ozcan kidney beans
drained and rinsed

1 cuppico de gallo
fresh

¾ cupunsalted beef stock
or chicken

1 Tbspchipotle chile in adobo sauce
chopped

2 Tbspadobo sauce

crumbled queso fresco

Instructions
Step 1
Heat oil over medium high heat
Add onion, Poblano and garlic
Stir for 3 minutes or until soft
Add both meats Sprinkle paprika, cumin and salt Cook until browned about 5 minutes
Step 2
Stir in tomato’s, beans, pico, chipotle and adobo. Bring to boil and reduce to medium low simmer for 5 minutes.
