Mini Cheese-Stuffed Meatloaf Dinner

Ingredients

1egg
beaten
¾ cmilk
½ cquick oats
whole grain uncooked
½ tspsalt
1 lblean ground beef
¼ ccheddar
in 12 cubes
Sauce
On the side options: mashed potatoes, steamed veggies
Instructions
Step 1
Grease a regular 12 muffin muffin tin.
Step 2
Mix egg, milk, oats & salt in a bowl. Add ground beef and mix well.
Step 3
Divide mixture into 12 equal portions. Insert one cheese cube into center of meat and roll in hands to form the meat into a ball around the cheese. Place into muffin tin and continue with remaining meat and cheese.
Step 4
Combine the ketchup and brown sugar in a separate small bowl. Stir thoroughly and spread over each mini meatloaf.
Step 5
Bake in a preheat oven, at 350° uncovered, on center oven rack for 30 minutes.
Step 6
Serve with green beans and mashed potatoes. Refrigerate any leftovers.
