Instructions
Step 1
Begin by mincing the kimchi strips.

Then on medium heat, stir fry the diced kimchi for 2-3 mins

Add 1 Tbsp of soy sauce and toss in your cooked rice. Mix and cook for another 2 minutes.

Turn off heat, and let the rice cool down for 5 mins.

Next, slice half a can of spam into strips and cook them on medium heat.

Place nori sheet on a flat surface. Cover 3/4 of the nori with kimchi fried rice and place spam strips in the middle.

Spread the mozzarella cheese on top.

Step 8
Then roll the kimbap gently and cut off ends to make sure it fits your pan (for the next step).

In a bowl, crack 2 eggs, add pinch of salt and mix.

On low heat, add egg mixture to your pan and place the kimbap towards one end of the egg mixture.

Roll the egg + kimbap together with a spatula and make sure it’s sealed.

Leave to cook on the pan for 2 mins. Then transfer onto a plate and microwave the kimbap for 1 minute.
