Ingredients

700mlwater
150gwhite grits
or yellow
fish seasoning
2 teaspoonspaprika
½ teaspoondried thyme leaf
½ teaspoononion powder
½ teaspoongarlic powder
¼ teaspoonblack pepper
4tilapia fillets
2 tablespoonvegetable oil
50ggrated parmesan
1 tablespoonsbutter
300mlalmond milk
2 table spoonscoconut cream
¼ teaspoonsalt
1red pepper

1onion
medium, sliced
2fresh chilies
chopped
Instructions
Step 1
Clean the fish ( use any fish of your choice). Rub on the paprika, garlic, ginger and seasoning; rub 1 tablespoon of extra virgin olive oil all over the fish and place in the air fryer.
Step 2
Turn over the fish after 5mins and leave for another 5-7 mins or until its done to your taste.
Step 3
In a medium pot, combine grits, water, almond milk, onion powder and salt; stir and cover to cook on low heat. stir often to prevent sticking to the pot.
Step 4
Add the butter, coconut cream and half the parmesan cheese. Stir remove from heat once it is creamy.
Step 5
Heat 1 table spoon of olive oil in a frying pan, add in sliced peppers onions and chilli. Fry slighly. It should still be firm and colourful.
Step 6
Serve creamy grits on a plate, top with some of the vegetables and fish fillets; garnish with the remaining fried peppers and onions

I. I used less butter to reduce saturated fat in the dish
2. To make it more creamy, I used coconut cream and almond milk
3. I used the onion powder in the grits instead of the fish. The flavor of the onion with the cheese took the grits to a delightful level..
4. I added red pepper, onion and chilies to make the dish colorful, increase fiber and vitamins. The combination of these flavors was a delight in the palate. It was a great dinner to have.
