Simple Black Bean Burger

I personally don't like tons of onions, peppers, etc in my REGULAR burgers so why would I like them in my black bean burgers? Simple recipe, perfect amount of seasonings, you can add whatever toppings (our favorite is sautéed mushrooms and onions w/ gouda). We serve with Alexia Sweet Potato Fries.

Instructions

Step 1
In a medium sized bowl, mash black beans to desired consistency. We don't mash it until it's completely mush, we leave some whole beans here and there. Mix in the bread crumbs, spices, and 1 egg. Form mixture into 4 even patties with, as exact as possible, same width of the hamburger buns.
Step 2
Trim and thinly slice mushrooms. Half and peel onions then slice thinly, mince 2 tbs of onion. Add mushrooms, sliced onions, salt and pepper. Cook until softened and lightly browned, 7 - 8 minutes. Turn off heat and transfer to a medium bowl.
Step 3
Heat oven to package instructions on Alexia sweet potato fries and cook for the instructed duration. You can make your own sweet potato fries, but these always come out better for me as I always have toddlers tugging at my legs.
Step 4
Heat a drizzle of olive oil in a large sauce pan over med-hi heat. Sear patties for about 2-3 minutes on both sides. The goal is to get some texture from the sear during this process, make sure the pan is hot enough to sear the patties before adding them in. In the last 2 minutes, top each patty with the onion/mushroom mixture and top with a slice of gouda cheese, cover with a lid and cook the remaining time (about 1 minute) until cheese is melted.
Step 5
Toast the buns and prepare to assemble! Spread mayo (garlic aioli is great here, it's literally just mayo with garlic powder added to it), add patty, then the top bun. We also love traditional toppings on this burger (tomato, lettuce, pickles, mustard, mayo, NEVER RAW ONION, and ketchup for dipping). Serve with the sweet potato fries and you're good to go!
