This here is a dish that I grew up loving.. especially on a school night! From the rich saucy beef to the ooey gooey cheesy pasta.. my take on Texas Chili Mac is def one you wanna keep in the stash🤘🏾

Instructions

Step 1
Reduce Heavy Cream in a sauce pan over medium-low heat. Keep a close eye on it, because dairy products will boil over quickly. This is gonna coat your pasta later, it needs to be extra thick and rich. Be careful not to scorch the bottom 😬.. Set aside to cool
Step 2
In a sauté pan over medium heat, add your olive oil, onions and garlic. Season with salt, black pepper and the other spices. Cook until softened and fragrant.
Step 3
Remove the onions from pan and add the beef. Bump up the heat to medium-hi and break up the meat as it cooks. Some chunks are fine for texture, but not super huge pieces. If want, drain the oil from the beef. Make sure you season here as well- and Taste!
Step 4
Add the onions and garlic back to the beef, along with the tomato sauce, worcestershire and sugar. Stir and let simmer on Med-Med Low to let the flavors develop. Taste this as it cooks.. a lot is happening in this short amount of time. Maybe 15-20 minutes ⏱
Step 5
Boil your pasta for 6-7 minutes in lightly salted water. You want the elbows to have a little bite to them. DO NOT GET RID OF YOUR PASTA WATER. Keep it. You’re going to need it when you’re making The Creamiest Mac & Cheese you ever had in your life. When done.. drain the pasta water into a separate bowl. Keep it handy🤘🏾
Step 6
Add your HOT PASTA back into the pot and coat with the reduced heavy cream. Then add the cheeses. About 3/4 of it. The rest will be used to garnish the top of your Chili Mac. Stir to combine and watch the magic happen. This is the base for that creamy Mac I was telling you about. As the cheese melts, you may find it necessary to use some of the reserved pasta water. I usually do just a little at time to help with getting a creamy consistency. Make sure the water is still hot though. Pro tip I learned from Chef Michael Symon on YouTube.
Step 7
Add the pasta to the beef mixture and stir to combine. Taste for seasoning. Maybe it needs more salt or pepper. You might like a little more tang from the W-Sauce.. whatever you feel is right is a win in my book. Just take an inch instead of a mile ya dig?
Step 8
This is the last step before eating. You have 2 choices.. you could pour the Chili Mac in a casserole dish, cover with the remaining cheese and brown it under the broiler.. or leave it in the pan and hit it with a torch like I did 🤷🏾‍♂️ Either way, garnish with chives or green onions and enjoy one of my all time favorite comfort meals 🔥
