Instructions
Step 1
Boil the potatoes until soft
Step 2
Peel the potatoes and squeeze through a ricer
Step 3
Place the riced potatoes into a large pan and make two valleys in the middle. Once you make the valleys add 1kg of flour

Add Salt, a pinch of Nutmeg and 2g of Saffron Powder

Crack 4 eggs onto the potatoes, flour and seasoning

Mix all ingredients together, Knead the mixture and roll into a large log
Step 7
Cut off sections from the log and roll into large, gnocchi width, strands. Then chop the strand into pieces.
Step 8
Roll the gnocchi on the back of a fork to give design, you can leave some unrolled for a different texture
Step 9
Boil in water for 3-4 minutes and serve with your favorite sauce
