Tortellini Soup

This tortellini soup is a complete meal in one pot that's ready in less than 30 minutes! It's full of sausage, beans, veggies and tortellini, all cooked in a savory tomato broth.

2 cans of diced tomatoes
vegetable broth
italian seasoning
celery carrots and onions according to what you have
omit parsley
add a little tomato paste if you'd like

Ingredients
6 servings
2 teaspoonsolive oil
¾ cupwhite onion
diced
2stalks celery
thinly sliced
2carrots
medium, peeled, halved and sliced
1 x 19 ounceSweet Italian Sausage
casings removed
6 cupschicken broth
1 x 28 ouncecan crushed tomatoes
1 x 15 ouncecan white beans
drained and rinsed
1 x 9 ouncecheese tortellini
refrigerated
3 cupsbaby spinach
2 tablespoonsparsley
chopped
salt
to taste
pepper
to taste
Instructions
Step 1
Heat the olive oil in a large pot over medium heat. Add the onion, celery and carrots to the pan and cook for 4-5 minutes or until just softened. Season the vegetables with salt and pepper to taste.
Step 2
Add the sausage to the pan; cook for 5 minutes, using a spoon to break up the sausage into smaller pieces.
Step 3
Add the chicken broth and crushed tomatoes to the pot, then bring to a simmer.
Step 4
Add the tortellini, spinach and white beans to the pot, cook for 5 minutes.
Step 5
Season the soup with salt and pepper to taste. Stir in the parsley and serve.
