Vietnamese Pizza Breakfast

If you want something simple and familiar, but with a little twist - try this Vietnamese pizza for breakfast!
Some notes:
- If you don't have sriracha-mayo, you can use sriracha and mayo. =)
- If you want you can also add ham or some other vegetables.
- I think one egg per rice pepper is a good ratio, so I make 2 of these for 1 portion. It's still a light breakfast, so you might want to make 3!

Instructions
Step 1
Take a non-stick pan and turn the heat on low-medium. Put your rice paper on - no oil needed.
Step 2
Sprinkle some scallions on, make a dent in the middle and crack your egg directly in. I suggest you don't whisk it before, I tried it and it leaked away from the rice paper.
Step 3
Now gently scrumble your egg and spread it around rice paper using a spoon or spatula. Add salt and pepper to taste.
Step 4
Sprinkle the cheese on.
I used creamy goat cheese, but you can use any you like. If you're using other veggies or ham - now is the time!
Step 5
When the egg is cooked - put some sriracha mayo on top and gently fold over the ripe paper so that it closes its content, like a quesadilla. =)
Step 6
Enjoy with some side veggies or sallad!
