Instructions

Step 1
Cut up the rice cake block into slightly big bite-sized squares (about 1 cm thick and 5 cm long).
Step 2
Soak the shredded green papaya in salt water with a few ice cubes.
Step 3
Heat 1 tbsp cooking oil in a large skillet over medium high heat. Add enough rice cake squares to the pan for 1 serving (about 10-15).
Step 4
Fry rice cakes until the bottom is light brown. Then flip the squares and lightly brown the other side.
Step 5
Crack 2 eggs onto the rice cakes and break the yolks to spread the eggs onto the rice cakes in an omelet-like shape. The eggs will keep the rice cakes stuck together.
Step 6
Cook until the bottom of the eggs are solid, qbout 1 minute. Flip the omelet-shaped thingy and try not to break it :)
Step 7
Add a pinch of garlic powder and pepper to your liking. Cook for another minute and remove from stove.
Step 8
Plate the dish and serve with chili garlic sauce, soy sauce, and green onions on top, and with green papaya on the side

Step 9
The rice cake block: bánh bột chiên - can easily be found at any Vietnamese grocery store.
Step 10
The given ingredients are for multiple servings (about 6), but the recipe instructions from step 3 onward are for individual servings. Repeat these steps for each serving cooked.
